Mauviel Vs. All-Clad Copper
- Mauviel pans are copper, while All-Clad pans use aluminum and stainless steel to coat the copper. This increases durability and decreases reactivity.
- Although no pan should be machine-washed, an All-Clad pan will tolerate it better than a pure copper pan like Mauviel. The softness of copper also leaves the Mauviel pans more vulnerable to denting and scratching.
- Stainless steel pans do not react with food, while copper can react with acidic foods, staining the pan and leaching copper molecules into the food.
- Copper pans like Mauviel are the best-known heat conductors and result in a more even heat distribution and more evenly cooked food. This is why All-Clad pans employ a layer of copper between the aluminum and stainless steel layers, but this is not as effective.
