Curry Ice Cubes or How To Store Extra Curry Paste
Previously we prepared a homemade Thai curry paste using dried red chilies. (If you missed it you can find the recipe here.) In the recipe I discussed storing the paste in the refrigerator for about a week. The reason for the short shelf life is that there are no preservatives, which of course is a great thing. Storing it in the refrigerator for one week is fine if you plan on using all of the curry paste within that short amount of time.
 But since the recipe yields enough for about three or four batches/pots of curry, some of us may be looking for longer storage possibilities -- after all, we wouldn't want to waste the delicious curry paste or our effort.Â
I have been making my own curry pastes (and curry powder mixes) for years now. So I can tell you from personal experience that the best way to extend the shelf life of your homemade curry pastes is with the freezing method. With a little planning you won't waste any of that insanely flavourful spice mixture and you can keep enjoying it for months to come.Â

What You'll Need and What To Do
All you need is a clean and dry ice cube tray. Do make sure that it is one that allows the ice cubes to slide out easily. You'll need a measuring spoon, like a one tablespoon one, your delicious homemade curry paste; And lastly you'll need a Ziploc bag and a pen.Â
Using the measuring spoon scoop out equal amounts into each little compartment in the ice cube tray. My ice cube tray allowed for two tablespoons in each compartment, yours may differ.
After filling each little slot you'll want to tap the tray on the counter to remove any air pockets. Now just put the filled tray in the freezer and allow to freeze completely. You can wait a few hours or overnight. Once the curry cubes are ready, write on the Ziploc bag the date and the measurement amount of each curry cube. Gently remove the frozen curry paste from the tray, place in the bag, remove any air pockets, and place back in the freezer.
Et voilĂ ! Your curry ice cubes are ready. Now next time you're cooking Thai curry all you need to do is grab one (or more) curry ice cubes from the freezer and you're set.Â
