How to Cook Yellowtail
- 1). Prepare a medium fire in a charcoal grill or preheat a gas grill to 350 degrees Fahrenheit. Coat the grill rack with vegetable oil to prevent the fish from sticking.
- 2). Brush the yellowtail fillets on both sides with vegetable oil using a basting brush, coating each side thoroughly. Sprinkle each side with salt and freshly ground black pepper to taste.
- 3). Place the fillets skin-side up on the oiled grill rack. Cook until the top of each fillet develops a light golden crust, about five to seven minutes.
- 4). Flip the fillets to skin-side down, and grill another five to seven minutes, or until a golden crust forms and the fish is almost opaque throughout. Check the fillets often to prevent burning.
- 5). Remove the yellowtail fillets from the grill with a pair of tongs and transfer them to a serving platter. Serve the fish immediately with a sauce or simply plain.
