This is an easy 6-ingredient casserole shared by Colleen. Feel free to add a few tablespoons of pimientos or a little chopped green onion or bell pepper for additional color and flavor.

Ingredients
  • 1 can (10 3/4 ounces) condensed cream of chicken soup
  • 1 can (10 3/4 ounces) condensed cream of mushroom soup
  • 1 can (10 3/4 ounces) condensed cream of celery soup
  • 1 cup long-grain rice
  • 6 chicken breast halves
  • 2 tablespoons butter, cut in small pieces

  • Prep Time: 20 minutes
  • Cook Time: 45 minutes


  • Total Time: 65 minutes
  • Yield: 6 Servings


Preparation

Heat the oven to 350° F (180° C/Gas 4) . Spray a 2-quart baking dish with nonstick cooking spray.

In a bowl, combine the soups with the rice; blend well.

Arrange the chicken breasts on the bottom or the prepared baking dish. Top with the soup and rice mixture and dot with the pieces of butter. 

Cover and bake for 45 minutes to 1 hour, or until chicken is tender and rice is done.
