Much of English cuisine focuses on meat. As an island country, fish makes up a central part of the diet, especially cold water fish and oily fish. Roasted meats and sausages, or "bangers," appear frequently in the English diet also. - Many dishes use dairy products. British cheese-makers use milk from cows, goats and sheep, as well as the occasional reindeer and buffalo, to curdle cheeses with vinegar, lemon juice or rennet.
