    Eggs

    • You will divide each egg into two halves, so prepare at least one egg for every two persons you expect to join the meal. Boil the egg in salted water for 10 minutes, then soak it in cold water to cool it down. Remove the shell and cut the egg into halves. Use a spoon to scoop out the yolks. Don't damage the whites of the egg. You can prepare the eggs beforehand and store the white and the yolk in separate containers in the refrigerator until you are ready to put the mimosa eggs together.

    Creamy Ingredients

    • Some recipes call for mayonnaise to give the filling a creamy consistency. Mix it with the scooped out yolk. Alternatively, substitute the mayonnaise with a paste containing crushed black olives, canned tuna, oil, anchovy fillets and Dijon mustard. You can also add about one tablespoon of brandy per egg. Another alternative to mayonnaise is avocados blended with olive oil.

    Seasonings and Garnish

    • Depending on other ingredients you use, the mimosa egg might need more flavor. You can use salt, pepper, crushed garlic, minced green onion or shallot and lemon juice to season the yolk mixture. For a spicy filling, add curry powder and paprika. Garnish the mimosa eggs with black pepper and basil leaves. After placing the filling in the egg halves, lay the mimosa eggs on a deviled egg plate or a bed of lettuce on a serving plate. Serve them with fresh bread and butter.
