The culinary expertise that passengers enjoy on every Princess cruise has been captured in an elegant new cookbook. Titled COURSES: A Culinary Journey, the 224-page coffee table volume is now available for sale aboard Princess ships, enabling passengers to bring home more than just memories of their shipboard culinary experience.
The oversized, four-color, hardbound book pairs Princess' worldwide itineraries with an accompanying menu of appetizers, entrees and desserts.


The recipes are illustrated by more than 80 dramatic full-page color photographs of menu items, along with a series of documentary-style black and white images designed to evoke the atmosphere of ships' sparkling stainless steel galleys.

"We decided that one of the things that could make our COURSES cookbook special, would be to present the recipes so they link the courses that our ships travel, with the courses composing each special menu we've created in the book," said Franz Rom, Princess' vice president of food and beverage.

Among the more than 200 recipes found in the book, readers will be treated to ten distinct destinational themes, along with some cooking basics. The menus are paired with cruise itineraries, including Caribbean, Canada and New England, South America, Panama Canal, Europe, Mediterranean, Alaska, Australia and New Zealand, Mexico and the Far East.

For example, recipes in the Alaska section include Smoked Copper River Salmon, Dungeness Crab Cake, Reindeer Chili and, of course, Baked Alaska. The Mexico menu features such dishes as Tequila Prawns, Brie and Papaya Quesadilla, and Chili and Cumin-Rubbed Catfish. Potato-Crusted Shark Filet is one of the unusual entries in the Australia/New Zealand section, while the Canada/New England menu offers recipes for such delicacies as Crawfish Quiche.
