A Fundraising Treat Idea for a Popping Good Time
Does your child's summer activity, sports camp or youth group have fundraisers going on this summer? Help them out by organizing a bake sale! You can sell your baked goods at local grocery stores, sporting events and church events after obtaining permission from those in charge. Below is a recipe for a delicious, child-friendly treat that you could bring to the next fundraiser for your child's activities, sporting events or youth groups.
Exploding Pop Rock Truffles
Ingredients:
• 6 ounces bittersweet chocolate
• 4 ounces heavy cream
• 5 .33-oz envelopes popping candy
• 12 ounces chocolate candy coating
Preparation:
1. Place chopped chocolate pieces in a medium heat-safe bowl. Bring the cream to a simmer over medium heat in a small saucepan.
2. Once simmered, pour the hot cream over the chocolate to soften it. Allow the chocolate to set for a minute then whisk together the cream and chocolate. Stir until smooth and completely mixed. Place a piece of plastic wrap directly on top of the mixture, ganache, and press out all air bubbles. Refrigerate until firm enough to scoop with a spoon--nearly 3 hours.
3. Scoop the ganache into small 3/4" balls and roll them into circles in your hands. If sticking or melting occurs, place cocoa powder on your hands to help reduce sticking.
4. With the balls rolled and placed on a wax paper lined baking sheet, open 4 of the Pop Rocks envelopes and pour them into a small bowl. (Opening them early will cause the humidity in the air to create sticking.) Roll a truffle ball in the Pop Rocks, and then roll it between your hands to push the popping candy into the ball. If the candy doesn't stick, roll the ball between your hands to make it stickier, and then roll in the candy.
5. Place the balls back on the baking sheet and repeat until complete. The quicker you work with the Pop Rocks, the better the end result will be. Place the balls in the freezer for a few minutes to help firm them.
6. While the balls are chilling, melt the coating chocolate in a microwave-safe bowl, stirring every 30 seconds or so.
7. Once melted smooth, remove the balls from the freezer and dip the balls into the chocolate coating using a fork or dipping tool. Place the dipped ball on the baking sheet and while the chocolate is still wet, drop a few more popping rocks on top. Repeat with remaining balls.
8. Refrigerate for 10-15 minutes before serving. Store your kid-friendly truffles in an airtight container in the fridge and serve at room temperature. Because the popping candy absorbs moisture, eat the truffles quickly. They taste the best between 24 hours and 3 days.
