Easy and Delicious Baked Chicken Dinners

Baked chicken is incredibly easy to make using either a whole chicken cut into parts or with pieces of chicken breast.
Basic recipes for baked chicken typically call for very few ingredients, which is just perfect for those days when you need a dinner that is easy to prepare.
If you want some gravy with your baked chicken dinner, make your own with chicken stock made from the drippings from the pan, or perhaps with a simple white wine.
Steamed white or brown rice, Spanish rice, and potatoes are all excellent side dishes to serve with a baked chicken dinner.
Another delicious recipe to try with boneless, skinless chicken breasts is Chicken Cordon Bleu, named after the French cooking school of the same name.
However, you will not need to get a diploma to learn how to make this dish that is actually quite similar to Chicken Kiev.
How to Make Chicken Cordon Bleu What You Need
  • Nonstick cooking spray
  • 1 egg
  • 1/2 cup Italian flavored bread crumbs
  • 4 boneless, skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices or 4 ounces of Swiss cheese
  • 4 slices or 1/4 pound sliced deli ham
  • Toothpicks
How to Make It First, preheat the oven to 350 degrees Fahrenheit and then coat a medium sized baking dish with the nonstick cooking spray.
A 7 inch by 11 inch glass baking dish tends to work best.
Cut the chicken breasts into halves and pound each piece down to about a quarter inch thickness.
In a shallow bowl or dish, beat the egg and add the Italian breadcrumbs to another dish.
Sprinkle the salt and pepper evenly on the chicken before putting one slice of cheese and then one slice of ham on each piece.
Secure the chicken by wrapping the cheese and meat around each piece and securing with a toothpick.
Next, dip the pieces into the bowl with the beaten egg before coating completely with the breadcrumbs.
Put the chicken into the baking dish and then give the pieces another quick spray of nonstick cooking spray.
Bake for 30 to 40 minutes, or until no pink color remains inside the chicken and the outer coating has turned a light, golden brown color.
Take out the toothpicks and serve your delicious Chicken Cordon Bleu.
You might also want to make a creamy sauce to add to the top of your chicken meal using a half-cup of chicken broth and one cup of heavy cream.
Heat the two ingredients in a saucepan along with seasonings such as salt and pepper to taste and stir until thickened.
Pour on top of the chicken immediately and enjoy.
